Ingredients
  

For the Sauce

  • 1/2 onion, diced
  • 2 garlic cloves, fnely chopped
  • 1/2 cup grated or chopped fresh ginger
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 1/4 cups fresh or frozen wild blueberries
  • salt and pepper to taste

For The Chicken Filling

  • 3 Tbsp olive oil
  • 1 red onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1 bell pepper, thinly sliced
  • 2 Tbp Mexican Spice Mix
  • 1/2 cup chicken stock or stock of choice
  • 2-3 cups pulled cooked roasted chicken
  • salt and pepper to taste
  • taco shells or tortillas for serving
