Crush the peas in a food processor using the pulse button. Do not purée them, as it is important to retain much of the texture.
In a sauté pan over medium heat melt butter until foamy. Stir in crushed peas, chopped oregano, salt and a pepper to taste.
Cook the crushed peas on a medium high heat for about 4 minutes until just tender. Stir in lemon juice, and taste then correct the seasoning if you need to.
