Move over avocado toast, because here come smashed peas. A simple and super tasty ways to serve up peas.

Easy Smashed Peas on Toast

Ingredients
  

  • 2 Tbsp unsalted butter
  • 2 cups fresh or thawed frozen peas
  • 1 Tbsp fresh chopped oregano
  • Salt and pepper to taste
  • 1/2 lemon, juiced
  • 4 slices crusty bread toasted
  • butter for toasted bread

Instructions
 

  • Crush the peas in a food processor using the pulse button. Do not purée them, as it is important to retain much of the texture.
  • In a sauté pan over medium heat melt butter until foamy. Stir in crushed peas, chopped oregano, salt and a pepper to taste.
  • Cook the crushed peas on a medium high heat for about 4 minutes until just tender. Stir in lemon juice, and taste then correct the seasoning if you need to.
  • Serve with butter and toasted crusty bread.

Easy Smashed Peas
Smashed peas cooked simply with butter and lemon juice makes a perfect appetizer.

Ingredients:

  • 2 Tbsp unsalted butter
  • 2 cups fresh peas
  • 1 Tbsp chopped fresh oregano
  • Salt and pepper, to taste
  • Juice of half a lemon
  • Serve with crusty sourdough bread

Place peas in a food processor and using the pulse button, smash them up. Do not purée them, as it is important to retain much of the texture.

In a sauté pan over medium heat melt butter until foamy. Add crushed peas, stir in chopped oregano, and add salt and pepper to taste. Cook peas over medium-high heat for about 4 minutes until just tender. Stir in lemon juice, taste and adjust seasoning.

Serve with buttered crusty bread.
